The 20-year-old winger ran from his own half against Vitesse Arnhem before firing the ball into the net to help earn his side a 3-0 victory.
Nice went on to win the race for his signature, and he looks to be a shrewd buy.
Saint-Maximin had three shots at goal in the 3-0 win, and now has two goals in two Europa League matches.
The youngster had a modest return at Bastia last season, but already looks like a smart buy for Nice, who Monaco may regret letting go on the cheap.
