In short, they like the look of Leicester players Demarai Gray and Ben Chilwell. And, since I’ve a word count to hit, what follows is an assessment of Everton’s chances of making those dreams a reality.
Gray:

Signed on Steve Walsh’s watch (when Everton’s director of football was merely Leicester’s head of recruitment) and allegedly wanted by Ronald Koeman (when Everton’s manager was merely Southampton’s), the Toffees’ interest would be no real surprise, especially with Yannick Bolasie potentially out for the rest of 2017.
Chilwell:

Leighton Baines is not getting any younger, while understudies Brendan Galloway and Luke Garbutt have done little while on loan to suggest they are capable of replacing Liverpool’s coolest amateur photographer. So, yes, Chilwell may also feature on Everton’s radar. And if Leicester’s slide continues into the Championship, the Toffees’ chances of signing the pair are bound to increase.

There were, however, reports last summer of a gentleman’s agreement between Walsh and Leicester, preventing him from signing any of the Foxes’ players for an unspecified amount of time, which could curtail Everton’s interest.
