He was particularly excited to get the chance to play alongside Defoe again, going out of his way to describe the striker's special talents.
Kaboul said: "He's a special guy. A guy you enjoy with him every day. I can't wait to see him and play with him again.
"He only needs one yard to shoot and to score. He can surprise anyone very quickly. To have a player like that is amazing."
The duo played together in two spells at Tottenham Hotspur, and in between at Portsmouth under Harry Redknapp.
Defoe joined Sunderland on a permanent basis midway through last season from MLS side FC Toronto, who he joined from Spurs a year earlier.
Having Defoe around will make it easier for new centre-back signing Kaboul to settle in, which will help in terms of getting him up to speed for the season ahead, as they look to push on under Dick Advocaat.
